Sopapilla Cheesecake Recipe is a very simple and delicious made with a thick layer of cheesecake, in between the crescent dough and topped with a cinnamon mixture. Instructions to make Sopapailla Cheesecake:
- Preheat oven to 350°
- Unroll 1pkg of crescent rolls and place in 9×13 baking dish. Push crescent roll dough to edges while also pinching edges of dough together. Set aside for later.
- Place 1pkg of cream cheese into medium mixing bowl and heat in microwave on high for 30 seconds to soften.
- Mix the softened cream cheese with 1 cup sugar, 1tsp vanilla extract, and 1tsp lemon juice until creamy. Should take approximately 5 to 10 minutes w/ electric hand mixer.
- Spread filling(cream cheese, sugar, van., & Lem. Juice) evenly across the unrolled crescent roll, leaving 1/2 inch of space from edge of dough.
- Remove 2nd crescent roll from package and roll dough until it will evenly cover filling.
- Pull the 1/2 inch of exposed bottom layer dough over top layer and push to close.
- Melt quarter cup of butter in small bowl, spread evenly over crusty.
- Mix 1/2 cup of sugar and 1Tbs of cinnamon, and pour evenly over crust.
- Using knife, cut 3-4 slits into top layer
- Place in preheated oven, and bake for 30-35 minutes, or until golden brown.
