Line a baking sheet with parchment paper. Place mushrooms in a single layer onto the prepared baking sheet. This is a pretty good mushroom soup recipe, with a little tweaking of course. I saute half the mushroom/onion/seasoning mixture - no broth yet - then I added a little half and half and put it in the food processor.

  1. Cook chopped onions, celery, and shallots with butter until soft in pot.
  2. Add chopped mushrooms until cooked.
  3. Added chopped parsley, basil, thyme to the cooked mixture.
  4. Sprinkle the flour one tablespoon at a time over the mixture. Stir in between the other flour tablespoons until flour has mixed into the cooked mushrooms etc.
  5. Once all flour has been added, add the chicken stock and bay leaves.
  6. Bring to a boil and then reduce to low and continue to cook for 30 minutes.

Never add salt to mushrooms until they've already browned or it won't happen, but other seasonings are fine. In a large saucepan, heat butter over medium-high heat; saute mushrooms and onion until tender. How To Make Healthy Mushroom Soup. Sauté the onions until slightly softened. Melt butter in large frying pan.
