  1. Roast the moong dal till it turns aromatic and let it cool.
  2. Once moong dal is cooled make a fine powder out of it.
  3. In a saucepan add 3-4 tbsp of oil and add cumin seeds, crushed coriander seeds, fennel seeds, asafoetida to it and saute it.
  4. Then add ginger paste and green chillies to it and saute it again.
  5. Add all the masalas [ turmeric powder, green chilli powder, garam masala, amchur powder, chaat masala] to the sauce pan and saute the masalas.
  6. Add the moong dal powder to the sauce pan and mix it with the masalas properly.
  7. Once it is mixed properly pour some water to it [the stuffing should turn to a crumbled texture after adding water].
  8. And your stuffing is ready.
  9. For the cover of kachori's trim the sides of the bread.
  10. Dip the trimed bread to the water [ very slightly] and press it.
  11. And the stuffing to the center of the wet bread and seal it tight.
  12. Praheat the oil properly. Once it is heated well put the kachoris to it and deep fry it till golden brown.
  13. And now serve the hot bread kachoris with a sauce dip.
