- Add the onion. Lower the heat.
- Add curry powder and salt. Stir until the onion becomes translucent.
- Make a well in the center. Break the eggs there. You can also use one egg, but I think two eggs work better in this recipe.
- Top with crushed black pepper. Cook to your preference. I like my yolks soft, so it probably took about 10 minutes on low heat. You might want to wait for five more minutes if you like firmer eggs.
Pour water into frying pan and bring sauce to the boil. Pour egg mixture over potato mixture in skillet. Cook, without stirring, until mixture begins to set on bottom and around edges. Lift and fold partially cooked egg mixture so the uncooked portion flows underneath. To make the potato cakes, squeeze the excess moisture from the sweet potato, then combine with flour, parsley, egg white, harissa and some salt in a bowl until the mixture sticks together.
