Add potatoes and ham; toss to coat. In a small saucepan over medium-low heat, bring shallots, garlic, cream, and thyme to a simmer. Slice the potatoes really thin using a mandolin or a really sharp knife, the thinner the better. This is what we call quick and easy comfort.

- Now my crockpot wasn't moving fast enough, so I used the pot part and put it the oven @350 for 2.5/3 hours or until the potatoes are tender.
In a small bowl, combine the soup, milk and parsley. Tags. carrot, dry chicken base, Ham, heavy cream, leftover mashed potatoes, Scallions, shredded cheese.
