Once the butter has melted, add the mushrooms, stir to coat with the olive oil and butter. In a large pot, melt butter.   5. When the soup has be simmered for 15 min, use a hand blender to blend the soup until smooth. Then, simmer it for another 5 min in low heat.
  6. Now, add in cream and mix well. Serve the soup on a bowl and top with parsley.

Transfer the soup back to the pot, add the cream, and heat it to a simmer. Add balsamic, then taste and adjust seasonings. Serve warm with reserved mushrooms on top and crusty chunks of warm bread. Line a baking sheet with parchment paper. Place mushrooms in a single layer onto the prepared baking sheet.
