  5. Place dough balls in ziploc bags making sure to get as much air in as possible so the dough can rise some more. Store in fridge (or freezer to use weeks later), before use let dough get to room temp by letting the dough in the bag sit on the counter for 30 mins to an hour before cooking.

Working one at a time, form each portion into a tight, even ball, rotating on counter and tucking under and pinching on bottom of ball to seal. Let stand for a few minutes. Combine the flour and salt in a stand mixer fitted with the paddle attachment. In a large bowl, dissolve yeast in warm water. Stir in enough remaining bread flour to form a soft dough (dough will be sticky).
