In another large mixing bowl, combine the milk, egg, canola oil, and pandan extract. Add the milk and egg mixture into the flour mixture and mix well until well combined. Could smell the pandan before even putting the pancakes into my mouth. Pancakes were fluffy, moist, soft and light, and the coconut ice cream complemented the pandan pancakes really well.
Instructions to make Pandan Pancake:
- Whisk eggs and sugar until well combined then add dry ingredients
- Pour milk (i combined milk and pandan juice before pouring it) or simply add drops of pandan paste
- Cook pancake and fill as you wish
