Steps to make Meatloaf Parmesan:
- Preheat oven to 350 degrees and prepare a sheet pan with parchment paper.
- Heat oil in skillet medium high and sauté garlic, red pepper and onions for 5-10 minutes. Until shines and reduced. Cool completely.
- Mix meat, worshire, eggs, Parmesan, bread crumbs, basil, parsley, 1/2 cup cooled marinara, peppers and onions. Add salt and pepper (red pepper flakes if you want). Form into a loaf on the pan.
- Mix 1 cup sauce with 1 T balsamic glaze and pour over meatloaf. Bake for 1 hour. Let stand for five minutes before slicing.
- Toast the rolls with garlic butter (2T butter with 1t garlic powder). Place meatloaf slices, 3 pieces of mozzarella, sauce if you want on the bread and put back in the oven for 5 minutes (until cheese melts).
