- Take one cup of raw fussili pasta
- In a big vessel boil enough water to cook pasta along with some salt and oil
- When water comes to a boil then put the raw pasta in it and cook on medium heat, until it becomes soft, but not mushy
- When the pasta is cooked properly then strain them in a big strainer
- Now refresh them under cold water to stop further cooking
- For tomato puree take 5 tomatoes and make a cross on top
- Boil enough water in a big vessel and put tomatoes in it
- Let it boil for few minutes, or until the tomatoes becomes little soft and the peel starts coming out on it's own
- Take out the tomatoes from the boiling water so as to stop further cooking
- Take out the peel of the tomatoes and grind them in a mixer jar and put the mixture in a strainer
- Strain the tomatoes in a vessel, the tomato puree is ready
- Now for making the pasta gather all the ingredients at one place like boiled pasta, tomato puree, onions, butter, garlic, fresh basil, oregano, mixed herbs, chilli flakes, grated cheese, cream and salt
- Heat butter in a pan on low heat
- First put garlic and saute for a minute
- Then add chopped onions and saute further for two minutes
- Then add tomato puree and let it cook
- Cook the mixture until all the moisture of the tomato puree evaporates
- Then add tomato chilli sauce, oregano, mixed herbs and chilli flakes
- Then add cream and mix well
- Then add boiled pasta and mix nicely
- Now add little more cream, the pasta should be moist only, now add salt and cheese and mix well
- Now add basil leaves, tear them with your hands only
- And mix well, the pasta is ready to serve
- For cheese chilli toast take slice of bread, apply little on it, sprinkle some grated cheese on top along with oregano and chilli flakes, cover and cook it in a pan on low heat, until the cheese melts, it is ready to serve, make other slice also in the same way. Now cut the slices into triangles
- Take out ready pasta in a serving plate and cheese chilli toast in another serving plate, garnish with basil and some cheese, serve hot
After about a minute, add the basil leaves and gently wilt them in the flavoured oil. Remove the garlic, basil and chilli from the pan and set aside.
