- Spray two 9 x 5 inch loaf pans with nonstick spray
- If you don't have buttermilk, add 1/2 tsp lemon juice to the milk, stir and let stand a few minutes
- Combine the butter, oil and sugar: Whisk or beat together the melted butter, oil and sugar in a mixing bowl until combined
- Add the eggs: Whisk until completely combined and the mixture is smooth.
- Add the milk and vanilla: Whisk the milk and vanilla into the batter.

This bread is amazing…. my family has our own secret banana bread recipe that is incredibly rich and divine but contains quite a bit of sugar, eggs, etc. I made this for them yesterday and they (picky banana bread elitists) loved it. The more you mix your banana bread batter, the more gluten is developing in the bread - which is great for a yeast-risen, chewy loaf, but not so great when you're hoping for a tender, soft quick bread. An overmixed banana bread batter will result in a dense, rubbery loaf.
