The ingredients needed to make Fattoush:
  1. Take For crispy pita bites:
  2. Take 2 pita breads
  3. Prepare 1/4 cup olive
  4. Prepare to taste Kosher salt

  6. Prepare 1 head romaine lettuce, torn into bite size pieces
  7. Get I pint cherry tomatoes halved
  8. Prepare 1 English cucumber halved and thinly sliced
  9. Get 1/2 medium red onion thinly sliced & separated into 1/2 circles
  10. Get 1/2 cup fresh mint leaves torn into small pieces
  11. Prepare Lemon sumac dressing:
  12. Prepare 1 clove garlic minced
  13. Get 3 tablespoons fresh lemon juice (about one lemon)
  14. Get 1 tbsp honey
  15. Get 1 teaspoon sumac
  16. Prepare 1/2 teaspoon kosher salt or more
  17. Take to taste freshly ground black pepper
  18. Take 1 third cup extra virgin olive oil

Fattoush is a popular salad in Middle Eastern cuisine and especially in Lebanon. In Panzanella, though, just as with fattoush, the bread is folded into the salad and is meant to absorb the dressing. Fattoush is one of the most well known Middle Eastern salads and a standard dish on the 'mezza' (small dishes) table. Quite a few years ago, I used to work at a bank in Troy, MI and there used to be a Lebanese restaurant called La Shish nearby.

Instructions to make Fattoush:
  1. Preheat oven to 350°F.
  2. Cut pitas in half. Separate the top from the bottom and tear into bite size pieces. Transfer to a bowl and drizzle with olive oil; toss to coat. Spread on a baking sheet and season with kosher salt. Bake 10 to 12 minutes, tossing once, until crisp and golden brown. Remove from oven and transfer to a bowl to keep from over browning. Set aside.
  3. Combine all salad ingredients in a large bowl and toss gently to combine.
  4. In a separate bowl combine first 6 dressing ingredients (garlic through black pepper); whisk until combined and honey has dissolved. Add olive oil in a slow but steady stream, whisking constantly until emulsified. Season to taste with salt and pepper.
  5. Drizzle dressing over salad and gently toss to coat evenly. Sprinkle crispy pita bites over the top and serve!
