This is a recipe I can whip up with cupboard and fridge staples, but adds a fresh, crunchy salad feel to a tuna pasta dish. Minimizing the time your salad is out of the fridge ensures it lasts longer. Let me know what you think of the recipe if you make it!

Steps to make Not Your Average Tuna Salad:
  1. Shred the lettuce and spinach and add to the bowl
  2. Dice the cucumber, avocado, apple, spring onion and tomato and add to the bowl
  3. Add the grapes to the bowl
  4. Drain and dry the tuna, and place it in a separate bowl.
  5. Combine with mayonnaise, lemon juice, paprika and the green finger chilli
  6. Mash this all together
  7. Mix your salad well, then add the tuna mix and top with flaked almonds to serve
  8. As an alternative, you can make this with smoked salmon instead - equally nice. shown in photos :)
  9. I eat salad for lunch pretty much every day,and it is usually a variant of this recipe. The key to a good salad is to shred everything well and keep all the parts chopped small. It allows you to combine several different flavours in your mouth at once rather than just one large lettuce leaf :) which can be a bit boring. With this tuna recipe, because everything is small, it often mixes with the leaves and everything gets a bit of that lovely tuna taste! I don't even use salad dressing on this one.

As the end of the month nears and the funds in my bank account dwindle, I always plan my creations around what's in my fridge. On Monday I had the following: veganaise (egg and dairy free mayo), carrots, relish, shallots, mustard, and chow chow relish. For my nicoise-style tuna salad, just open three cans: one each of tuna, white beans and sliced olives. Toss these ingredients with slivered red onion, olive oil and lemon juice. Take time, if you like, to boil eggs, or pick them up at the grocery salad bar.
