The ingredients needed to make Orzo Pasta Salad:

  2. Make ready 3 garlic cloves; smashed

  7. Take 1/2 C extra virgin olive oil

  11. Take 3 Campari tomatoes; seeded & small dice
  12. Take kosher salt & black pepper; as needed

In a large bowl, combine the tomatoes, cucumber, basil, onions and spinach. Drain pasta; add to tomato mixture. Place the orzo and all the other ingredients in a large mixing bowl and pour the dressing over the top. Stir to combine, taste and adjust seasonings, and refrigerate at least an hour before serving.

  2. Bring a small pot of salted water to a boil. Add orzo. Cook until al dente, about 8 minutes. Drain. Spread out on a plate and cool in refrigerator.
  3. Combine orzo, spinach, cheese, and tomatoes in a small mixing bowl. Add dressing. Fold to combine. Cover and let sit in fridge overnight to marinate.
  4. Lay bacon on a baking tray lined with parchment paper. Bake at 400° for approximately 12 minutes or until bacon is crispy. Drain fat and reserve for another use. Pat bacon dry with paper towels. Roughly chop to a small dice.
  5. Fold 3/4 of bacon into salad amd reserve remaining bacon for garnish.
