To make the soup, peel and/or trim the onion, leek, celery and carrots, then roughly chop along with the courgettes. Use up leftover roast or ready-cooked chicken in this healthy and warming South-American style soup, spiced up with cumin and chilli.

  4. To the veg mixture add tinned tomatoes and stick and bring to the boil then reduce to a simmer for 30mins until everything is nice and soft. Add chicken and cook for a further 5 mins
  5. Blend if you prefer or leave it chunky, serve with fresh crusty bread 🥖

Simmer chicken, chicken broth, bay leaves, poultry seasoning, cajun seasoning, salt, parsley, garlic, celery and onions in large pot for a couple of hours or until chicken is falling apart. Soup was 'souper' easy and delicious. Can't wait for my hubby to get home so I can share it with him.
